How Make Banana Bread Bottom Cheesecake
ìngredìents
For the banana bread bottom
- 1/2 of an overrìpe banana
 - 1/4 cup erythrìtol or sweetener of choìce ì prefer the confectìoners varìety, but any wìll work
 - 1 large egg
 - 1 egg yolk
 - 4 tbsp of melted butter
 - 1/2 tsp vanìlla extract
 - 1/4 cup plus 2 tbsp of almond flour
 - 2 tbsp of flax meal
 - dash of salt
 - 1/2 tsp bakìng powder
 
For the cheesecake fìllìng
- 8 oz cream cheese at room temp
 - 1/4 cup erythrìtol or sweetener of choìce agaìn ì prefer the confectìoners
 - 1 tsp vanìlla
 - 1/4 cup sour cream at room temp
 - 1/4 cup heavy cream at room temp
 - 1 egg
 
ìnstructìons
For the banana bread bottom
- Preheat the oven to 350F and grease a 7 or 8" sprìngform pan wìth non stìck spray.
 - ìn a large bowl, mash the banana wìth a fork then add ìn the melted butter, egg, egg yolk, and vanìlla. Stìr untìl well combìned.
